Melon, Cucumber, and Feta Salad

Cantaloupe is ON ONE this summer.

If there’s one great thing 2020 has given us so far, it’s perfectly sweet, juicy and flavorful cantaloupe. And while seemingly an unlikely combo, this melon pairs so well with cucumbers, briney feta and a little kick of aleppo.

(about 4 servings)

Ingredient List:

1 Cantaloupe, skinned + seeded
2 Persian Cucumbers or 1 larger Cucumber 
1/2 cup Feta
1 Lemon
Mint, small leaves or torn
Basil, small leaves or torn
Aleppo Pepper or Fine Chili Flakes
Kosher Salt


  1. Haphazardly cut your melon and cucumbers; use the heel of a knife to chunk them up into rustic bite-sized pieces that catch all the goodness you’ll add in its nooks. 

  2. Toss the melon and cucumber together with a few pinches of kosher salt.

  3. Assemble your salad in two layers: plate half of the melon and cucumber, crumble on half of the feta, squeeze a bit of the lemon over top and sprinkle a pinch of aleppo. Add some mint and basil. 

  4. Simply repeat step two and enjoy!
